    I'm not a huge coffee fan but I do know that our son would really, really love this! Vanilla Dream also sounds like something this non coffee drinking Mom could get used to, you think?

    My Thoughts:
    When I tried Java Factory's Vanilla Dream is I decided that it was heaven in a cup and that a new favorite coffee! I added it to my wishlist so that my Mom would get me some for Christmas and when my second box of this awesome coffee arrived I couldn't wait and made a cup in the middle of the day. While Vanilla Dream is still my favorite, I enjoy all the different coffees in the variety box. Each one is smooth, flavorful, and delicious. My boyfriend tried several different ones. He likes a stronger coffee so the taste and the kick that Da Bomb offers appealed most to him. The variety box lets us both have our favorites.     DIY Taco Meat in the Slow Cooker

    My husband Jake and I grew up eating the good ol’ Midwestern ground beef tacos our moms prepared for us.  In my household, tacos always came from a boxed kit. I loved pulling the ingredients from the box and helping my mom warm the crunchy taco shells in the oven and pour the seasoning mix into the ground beef. 

    Since our childhood, my husband and I have sought out all kinds of tacos. We’re especially fond of Mexican-style street tacos simply dressed with cilantro, chopped onion and a spritz of lime. We love tacos made with double corn tortillas and the spiciest salsa possible. However, we still reserve a very special place in our hearts for ground beef tacos. 

    Jake recently had a special dinner request for ground beef tacos like our parents used to make, complete with “the works” including sour cream and bright, orange shredded cheese. I was happy to oblige, as I was also craving a taste of comfort food. 

    Although you can make taco meat more quickly in a pan, I enjoy preparing it in a slow cooker. It’s easy, fun, and fills your home with smells of dinner. I also love how easy it is to prepare my own taco seasoning without a packet. Most of the spices are probably sitting in your cupboard, and, if you are missing something, feel free to improvise. I did! 

    Slow Cooker Taco Meat

    2 pounds of lean ground beef
    3 tablespoons tomato paste
    ½ onion, finely chopped
    2 cloves of garlic, minced
    1 teaspoon cumin
    2/3 teaspoon salt
    1 teaspoon black pepper
    ½ teaspoon coriander
    ½ teaspoon oregano
    ¼ teaspoon smoked paprika
    Optional: Crushed red pepper flakes or cayenne, to taste
    ¼ cup water

    • Place the ground beef in your slow cooker.  
    • Add the tomato paste, onion, garlic, and spices.
    • Use a spoon to roughly combine the ingredients. 
    • Add the water and cook on low for three-four hours. 
    • Stir the ground beef occasionally and break up the larger chunks every so often during the first hour. Our slow cooker cooked the taco meat in about two hours. Enjoy it when it’s fully cooked or allow it to continue to simmer on low or warm.

    • Serve with your favorite toppings and taco shells. We like refried beans, sour cream, salsa, shredded cheese, chopped onion, chopped tomato, shredded lettuce, and pickled jalapenos. You can also serve the meat as a taco salad by simply adding chips.

    Reasons Why Iowa Schools Should Start After Labor Day

    OK~ There's a hot topic in Iowa right now and it's all about when to start the school year. For several years the state of Iowa has had a law that stated that school districts needed to start classes after Labor Day. Here's where the problem lies. The majority of school districts in Iowa applied for a waiver to start before Labor Day and were allowed too. What's been interesting, is the fact that school districts were starting classes earlier and earlier every single year.

    So, you are probably now asking, "Who cares?" I can tell you that there are several families in Iowa that care. I grew up participating in 4-H activities for 10 years, as it was a huge part of my life. The Iowa State Fair is part of Iowa, who we are, and what we are about. With the school start dates moving towards the first half of August, many families have to opt out of participating in the Iowa State Fair. This means, if you are a 4-H'er who wants to show animals or participate in the Iowa State Fair, you can't; as you have to attend school. This also impacts FFA members.

    I hear from many folks say that this should not matter, as very few kids are in these programs. Now, if that's the attitude that folks are going to have, the program will have fewer kids in them. These programs teach life skills that go on for years. There is a lot of value there. The leadership experience that 4-H gave me was something that I was never able to find in the public school system.

    Do people not realize that a lot of money funnels through the tourism industry in August? August is still warm, people want to swim outdoors, people want to experience those fun outdoor activities that cannot be done during many months in Iowa. Let's grab the tourism money while we can, as it's a short season. The money that the tourism industry brings in is vital to our state. And yes, the older I get, the more I realize how money revolves around everything!

    My boys are out of school, and I said this over and over while they were in school. The school buildings are hot in August and they are much cooler in June. When sweat is dripping from ear to ear, there's not a whole lot of learning taking place. June is also typically not great weather for outdoor swimming pools, so it would make sense to utilize those pools when the heat is on.

    Iowans should be proud of the awesome 4-H and FFA programs that are in our state. Let's give our kids the opportunity to showcase their skills at the Iowa State Fair and not make families choose between school or the Iowa State Fair. And then there is the argument that many kids have nowhere to go in the summer, so school would be better. Really? The last I counted, 180 days is 180 days. After All, It's All In a Mom's Day, Right?

    A Fun January Day In Iowa Bringing Town And Country Together

    OK~ So what do Iowans do on a Winter's day in January? Folks in North Iowa, specifically Franklin County could recently be found at the Town & Country Expo. Iowans, as many folks do, have a passion for sharing their story. I had the honor of leading a panel at this event, where we shared how social media and blogging helps connect all of us.

    Larry Sailer, of Musings of a Pig Farmer, Celeste Settrini, Val Plagge of Corn, Beans, Pigs and Kids, and Amy Hild of Latham Hi-Tech Seeds and Modern Rural Living all shared how social media is impacting their lives. Celeste was our keynote speaker of the day and came to Iowa from California.

    There were several sponsors on site for the day and Hampton State Bank had a really fun wheel to spin. From winter hats to gloves to a chance to catch a lot of money, they had the fun! Amy of Modern Rural Living spun the wheel and she found herself in the Money Pit! How cool is that? By the way, she had 30 seconds to grab as much money as she could. Amy walked away with $6.00!

    So, tell me! Does your community host events that bring town and country together? My biggest take away from the event in Franklin County in Iowa was that I was reminded of how important it is for all of us to work together. It doesn't matter if we are in the field, greeting people in a store on Main Street, or serving up a turkey sandwich in the local sandwich shop. The people within our communities are our biggest cheerleaders and we need to embrace what everyone has to offer. After All, It's All In a Mom's Day, Right?

    Go Ahead, Be "That" Mom: Friend Your Kids' Friends Through Social Media

    OK~ I cannot stress to all of you how important it is to keep an eye on your children's social media accounts. Just this past week I received a message from a friend who thanked me for encouraging her to follow and friend her son's friends on social media. Her son is in 6th grade...... 6th grade is that age where a lot of kids are not old enough to be on social media. Kids are supposed to be 13 years old to have a Facebook account. Yet, in all reality many of us know that kids will set up these accounts with or without their parents knowledge.

    I struggle with this a lot. Would someone tell me why parents will give their children a $700 mini computer (smart phone) and complain about $10 a month to monitor their children's online activities? In my friend's case, the parents of this sixth grader did not know that their son was engaging through social media. This particular case was a life or death situation. This sixth grader was sharing on Instagram how he had been bullied, how he had been the bully, and why he wanted to kill himself. Thankfully, my friend knew she had to be an upstander, not a bystander with a phone call to the boys parents.

    This is another example of how sixth graders are using social media. Sure, they are posting pictures of themselves and things through Instagram, but what I learned from all of this was the fact that our kids are using social media to reach out for help. Instagram is a photo app, so suicidal messages are not something that we immediately look for on Instagram. There was a stock photo, cartoon like character posted with his lengthy post on Instagram.

    I later learned that this 6th grade boys parents did not know what Instagram was, how to access it, or get a screen shot. If you are a Facebook user, you will notice that our kids are not hanging out there a whole lot. They are hanging out where Mom and Dad are not.

    Parents, step up your game by friending, following, and engaging with your kids online. Be a friend of your kids' friends online- they may need to thank you later on in life for saving their life. I am so grateful that my friends quick actions saved this 6th graders life. Be an upstander, not a bystander in your community. After All, It's All In a Mom's Day, Right?

    Reflecting and Brainstorming On How To Use Empty Spaces In Malls Across The Country

    OK~ The holidays have come and gone. It's probably not a surprise to a lot of folks that several retailers all across the U.S. are closing their doors in several locations. Our local mall in North Iowa happens to have two stores, which I considered to be fairly popular; have announced that they will be exiting our mall in 2015.

    Since this announcement I have read several articles that state how malls are a dying breed. That seems to be the case, but people from North Iowa still go to malls. They go to The Mall of America in Bloomington and Jordan Creek in West Des Moines on a regular basis. I am not a huge shopper in town or out of town. In fact I often have to look at my wardrobe and pictures to be sure I don't wear the same shirt that I wore for last years family Christmas gathering. So, it's probably fair to say that my lack of purchasing new clothes on a regular basis has something to do with them leaving town.

    My family and I do shop online. Quite often, it's after we have spent two hours going store to store to find the item that we need, to be told, "We don't carry that." So... the next time we need something (it's quite often computer hardware) we head right to Amazon and our shopping is completed.

    Now, a lot of folks think it is just terrible that these stores are leaving town. When in reality, I see this as an opportunity for someone that wants to start their own business. I'm not saying another clothing store needs to replace the ones that are leaving, but something totally new that the consumer in the year 2015 will embrace.

    My hometown, Mason City, Iowa happens to be home to the famous Park Inn Hotel and it is located near the mall where these stores are vacating.

    There has to be something there that could tie these empty spaces together with this historical hotel. There are still tenants in this mall, but there will be fewer. So, this brings me to the new opportunities that are around the corner. I've been thinking a lot about an inTANDEM workspace in Mason City where folks could gather that work from home to network and be connected with others. The North Iowa Bloggers visited Webster City, Iowa and we all fell in love with this space. That's just one idea and I know there are dozens more out there.

    What are some ways that you have seen communities utilize the "dead" space that is being left in malls around the country? There are ideas out there and I have to say I saw a few when I was recently in Webster City Iowa.

    While in Webster City, the North Iowa Bloggers stumbled across a SOS Vintage Style Shop, a pottery station, a fun sports themed restaurant/bar, a shop featuring an upscale resale shop, and vintage items which are all possibilities.These were local shops, but they all had ideas that could be thrown into a business plan for a new business to dazzle folks in North Iowa. I'd love to hear what you have to say, as I know many communities all across the country are looking for ideas. After All, It's All In a Mom's Day, Right?

    Winter Is Really Here- Tips To Be Safe While Out And About

    OK~ Winter has arrived with a vengeance here in Iowa. It's cold and we have nice, white, fluffy snow! The view in my yard was like this as I headed to town to buy milk.

     I know, seriously? Who is seriously out of milk on a cold winter's day? ME- raising my hand high. I did notice an ice scraper on the floor in the back seat, so I did have one helpful item in the car.

    As I ventured to town I began to think, you know what? I was not prepared for Winter driving. I did not have a shovel or blanket in my car. I have now gathered these items and tossed them into the trunk of my car.

    • Shovel
    • Blanket
    • Extra pair of gloves/mittens
    • A bag of kitty litter
    • Extra Winter hat
    • Couple bottles of water
    • A bag of chocolate (M & M's)
    • A box of granola bars
    • Wool socks
    I already had a tire pump and jumper cables in the trunk, so I was set in that department. But, you know, if you do get stuck in conditions such as today- below zero wind chills can be deadly. 

    It's also a good idea to leave home with a fully charged cell phone and make sure you have a charger in your car. In good weather, these are things we don't often think about. But, being able to make that "one" call can be the difference between frost bitten toes or not.

    Before this cold hit, I made sure to fill up my gas tank. It's important in cold weather to really keep an eye on that 1/2 way mark. And if your gas gauge is like mine, it always seems that the last 1/2 goes quicker than the first 1/2. I also installed new windshield wiper blades in September, as I knew the pair I had were not going to make it through Winter driving conditions.
